Spin, Eat, Shop

This morning I got up early (7:25!) to take a spinning class. I took my first spin class about two weeks ago and I love it! The classes always seem to fly by and I love how I feel afterward. I hope Purdue offers spinning, if not, well I don't know what I'm going to do!

After I got back from the gym it was time to eat! Is it just me or do you think of what you want for breakfast as soon as you wake up?? yeah that's probably just me... I had pancakes on the brain all during spinning, so pancakes it was.




Whole Wheat Chocolate Chip Pancakes (serves 1):

1/2 cup whole wheat flour
1 t. baking powder
1 t. ground cinnamon
1/2 cup almond milk 
handful chocolate chips


Directions:
Heat skillet to medium heat. Mix dry ingredients together in a small bowl. Add in almond milk and mix until smooth. Stir in chocolate chips. Place pancakes on skillet and cook for a few minutes, then flip. Makes 5-6 baby pancakes. 

Blueberry Syrup:

1/3 cup frozen wild blueberries
1 T. maple syrup

Directions:
Place frozen berries in a small microwave-safe bowl and heat for 45 seconds on defrost setting. Take berries out of microwave and smash with a fork. Pour maple syrup into the same bowl and mix. Reheat in microwave about 10 seconds to warm syrup. Pour over pancakes and enjoy:)  

These were quite tasty and of course I had to enjoy them with some homemade iced coffee. Delicious!

Good news! I finally found a bedspread for my dorm. My mom and I went shopping a few days ago and  as soon as I walked into HomeGoods, this was calling my name.

Since my mom isn't the biggest fan of shopping (I don't know how!), I decided I could get the rest of the stuff for my dorm solo. I decided to go to my favorite store of all time, Target. I love Target sooo much, but too bad it's about a fifteen minute drive from my house (actually, maybe that is a good thing...). 

While I was at Target I got most of the things I needed, but there was something I wanted had to have from Anthropologie. If there was a store that was made just for me, I swear that is it. Too bad everything is way to expensive to buy. Actually, I take that back. I did buy something. Two things to be exact. 

Since it was my sister's birthday yesterday (happy birthday Em!) my other sister and I took her out to lunch and shopping. The mall we went to is the closest one near home with an Antropologie. I knew what I had to get! A few days ago I was looking over their website and found a mug I had to have. I had seen it on Julie's blog and thought it was adorable. Since I knew it was from Anthropologie I figured it'd be expensive, but surprisingly it was only $6! That's a bargain if you ask me. Besides the mug I also got a bowl (for $5!).

Since my family was busy yesterday, we are celebrating my sister's birthday tonight.  She got the choice of going out to eat or having dinner at home and she chose just to stay home and have a home-cooked meal. I'll be back with a recap later!
